Mozzarella Stuffed Chicken Breast


This is one of my favorite recipes its flavorful, healthy, spicy and easy..

1) Preheat oven to 425 c

2) Spray pam over glass cooking dish.

3) Butterfly 2 boneless skinless chicken breasts (be careful not to go all the way through) places thinly sliced mozzarella on the bottom of the breast. Than set in the dish.

4) In a small bowl mix one egg, 1/4 cup whole wheat bread crumbs, 2 finely chopped garlic cloves and if you like one chipotle pepper finely chopped. Mix well and place over cheese.

5) Fold chicken over than drizzle with olive oil. Place in oven for 40 minutes.

Healthy Chicken Sausages

The Italian girl in me loves sausage, the healthy girl in me loves chicken that’s grain fed and chemical free. This morning at the grocery store I found the best of both worlds.
Here’s some info….
No MSG, no fillers, no nitrates, no milk.
Most of the info is in the pictures included. They weren’t bad, for what they are. I would get them again, I’m still so excited I found them. There is . 1 gram of saturated fat which is a bad thing, but its a sausage. This isn’t something I would eat everyday but something that you can add to your diet for variety.




Healthy “Fast food” Take 2: Dinner

If you read my earlier post http://fitnessandhealthylivingtips.com/2012/04/10/healthy-fast-food/ you would understand that today my meals were all store-bought and super quick. Lunch was a yummy Orzo Greek salad Snack was a banana, and Dinner well my dinner was this……….


Again from my local Grocery store, Panko coated baked chicken breast, with 100 grams of grilled mixed vegetables. mmmmm so good and best of all it was super quick and cheaper than a fast food meal. Chicken was $3.99 and the veggies were $1.50.

No excuses people…Excuses get you fat
